Labor Day weekend just passed. And in the spirit of the holiday, I spent the last three days relaxing with friends, family, and food. No labor for this girl. No siree.
So when I promised to bring a dessert to accompany a good friend’s delicious BBQ smorgasbord, I decided to keep with my low-key state of mind and make my very first no-bake tart.
And as if no-bake wasn’t enticing enough, it was a no-bake peanut butter tart, complete with a PB/whipped cream/sweetened condensed milk/cream cheese layer, topped with a whipped cream layer, and sprinkled with chopped peanuts. In short, it’s heaven in a tart pan. And when I served it to my friends, one of them remarked that it was a good thing he hadn’t known about this tart his whole life, because today he’d surely weigh 400 lbs. So yeah, I’d say it turned out pretty well.
My only regret is that I didn’t take a photo of a single slice of tart to show off its lovely, mouth-watering layers. And now that the evidence is gone, you’ll just have to trust me that this tart is the bee’s knees and should be made immediately. And should be shared with people named Katie.
