quick and impressive: herbed butter

You may think I’ve gone off the deep end.  I’m always championing quick and easy recipes, and here I go making herbed butter, which I’m pretty sure you can buy at the grocery store.  But don’t be deterred!  This little recipe is very simple, takes only a few minutes to pull together, and is so much better than anything store bought.  And you’ll impress your parents/in-laws/friends/pets with your “hard” work.  Do you need any more convincing?


1/4 lb (1 stick) unsalted butter at room temperature

1 1/2 teaspoons minced scallions

1 1/2 teaspoons minced fresh dill

1 1/2 teaspoons minced fresh parsley

1/2 teaspoon freshly squeezed lemon juice

1/2 teaspoon kosher salt

Pinch freshly ground black pepper

Combine all of the ingredients in the bowl of an electric mixer fitted with the paddle attachment on low speed until combined.  Do not whip.

    This looks awesome! I also heard the other day about just melting butter with sage and it’s a sauce. So easy. Thought I’d share since you have such a good start on the butter train. 😉
